Move over Chicken Caesar Wraps — there’s a new wrap in town! Filled with nutritious chickpeas, fresh herbs, and luscious vegetarian Caesar Dressing.
|2||Whole wheat tortilla wraps|
|1 (15 oz) can||Chickpeas|
|1/4 cup||Red Onion (Diced)|
|2 generous handfuls||Microgreens|
|5 tablespoons||DRESS IT UP DRESSING Caesar Dressing|
Rinse and drain the can of chickpeas. Gently rinse the parsley and then chop finely. Dice the red onion.
Transfer chickpeas to a mixing bowl and mash (I use the bottom of a cup). Don’t worry about mashing until completely smooth — it’s perfectly fine to leave some chickpeas whole! Add red onion, parsley, and Caesar dressing to the mixture, and mix with a spoon until combined.
Place wraps on a plate and mash half of the avocado onto each. Then, divide the chickpea mixture between them. Top with a handful of microgreens (some of the most nutritionally dense deliciousness you can find).
Tuck in the ends of the wrap and then, one at a time, bring the sides of the wrap towards the middle (this is an art form we struggle to master). Simply slice in half and enjoy! Feel free to serve with a little Caesar Dressing on the side for dipping!
